- Tatemar y ablandar los chiles en agua caliente, dejar enfriar un poco
- Licuar los chiles con 1/4 de la cebolla, ajo y caldo de cocción
- En una sartén poner un poquito de aceite y dorar el otro 1/4 de cebolla casi hasta quemar y retirar; pasar la salsa por un colador y freír, agregar 1/2 tza de agua, sazonar con sal y consomé de pollo y dejar a hervor a fuego medio
- Cocer en abundante agua las papas, y retirar antes de que se pongan muy blandas, cortar cocción con baño de agua fría, pelar y picar en cubos pequeños, reservar
- Quitar la piel de la longaniza y freír con aceite, desmenuzandola
- Una vez cocida la longaniza, agregar las papas a dorar y terminen su cocción, por último agregar la cebolla finamente picada
- Poner a la mano todos los ingredientes para comenzar a armar
- Pincelar el pan por ambos lados con la salsa y freír con muy poquito aceite en una sartén
- Armar el relleno... una tapa del pan untar de frijoles refritos, una capa de las papas, una capa de lechuga, jitomate, aguacate, crema, queso y salsa a su gusto 😉
