  1. Lava el pollo y ponlo a cocer con el agua, cebolla y consomé. Tapa y cocina por más o menos una hora o hasta que el pollo esté cocido.
  2. Aquí tenemos las semillas de calabaza. Lávalas y ponlas a dorar en el aceite. Cuida no se quemen.
  3. Aquí tenemos el maíz morado. Lávalo y ponlo a dorar en el aceite.
  4. Junta las semillas de calabaza y el maíz ya dorado. Muele en seco, de preferencia en el Nutribullet o de lo contrario en la licuadora. Hazlo en partes.
  5. Aquí tenemos los chiles guajillo, muy importante, escoge los de un color rojo claro. Lávalos y ponlos a dorar en el aceite. Cuida no se quemen, sólo a que su color rojo sea más brillante.
  6. Lava los chiles de árbol y también dóralos.
  7. En el aceite que quedó, dora los ajos, clavos y pimientas.
  8. Con unas pinzas saca las piezas de pollo y cuela el caldo.
  9. Junta los chiles, ajos, clavos y pimientas. Agrega caldo caliente del pollo ya cocido, para que se suavicen.
  10. En el Nutribullet muele los chiles, las semillas y maíz que ya moliste. Agrégales caldo en el que cociste el pollo. Cuela este mole y siempre regresa al vaso lo que queda en la coladera. Hazlo por partes. Prácticamente usarás todo el caldo.
  11. En una olla grande pon 1/2 taza de aceite a calentar y agrega el mole. Menea constantemente para que no se pegue. Cuando empiece a hervir baja la flama y prueba la sazón. Debe quedar espesito. Agrega las piezas de pollo. Sirve caliente acompañado de un buen arroz.
